Don Giotto Olives (Borgo San Lorenzo, 1820 - Campi Bisenzio, February 9, 1892) was an Italian priest, priest, beekeeper, scholar of bees, a classician.

Originally from Borgo San Lorenzo, Giotto Ulivi was a bishop of Santo Stefano in Campi from May 26, 1878 to the death of February 9, 1892.

Personality of great culture and multiple interests, Ulivi was above all a passionate apiculture scholar, to whom he contributed greatly with works such as the Theoretical Compendium of Practical Apiculture rational (1869 - Florence, Cenniniana Typography); Italic bees; Country life; Considerations on the Regeneration Bee Fertilization; Critical examination of the theories on the partenogenesis of bees and manna, honey and lettuce: observations. He was also founder and director of the magazine "L'Apicultura rational" published since 1882 at his death.
