Salivating agent

With the term salivating agent or "sialagogo" we identify the chemical molecules that can stimulate saliva production.

The organic acids present in a chewing gum are able to stimulate saliva production during chewing. An example of saliva is citric acid. Salivation is regulated by the trigeminal nerve that determines the perception of other sensations, such as the cold or hot taste caused by the capsicin present in the chili. Salivating agents are used in the production of chewing gum to improve the aromatic perception of the product.
