Ravigote


Ravigote - abusively referred to as "ravigottesa sauce" - comes from classic French cuisine and is made from vinaigrette. This vinaigrette adds capers, herbs and shredded onions. This dressing is served at for example leaf dishes. Ravigote is often confused with remoulade (sauce).

Warm ravigote - specially for certain beef and veal dishes and poultry - is made from a base of calf curry with equal white wine and wine vinegar. Additionally, the capers, herbs and shredded onions are added. Source
