Bocconcini
Bocconcini alla panna di bufala is the small 'cherry' version of the ripened mild Italian cheese originally from the area around Naples (Campania region). The cheese must be eaten freshly. This is originally made of milk buffalo milk, although today it is often mixed with cow's milk or even whole (cow's milk) made industrial production. The demand for mozzarella caused some producers to import milk from India and, for example, New Zealand. They are sold in moisture (bags or containers) with whey or salted water. The spheres then have the size of a christmas meringue. In taste they are flatter than ordinary mozzarella, which is made in larger spheres.
The name means in Italian: Mouthful, but in Reduction Form.
