Long fingers

Long fingers are elongated airy biscuits with a layer of sugar on the top. The cookies are also called finger cake or boudoir, which is the name of the long finger in French.

Long fingers are used in many recipes; ice tea and tiramisu can be covered with it. They are made by stiff knitting of protein and sugar, and then mixing egg yolks and then sifted flour. The mixture is sprayed onto a baking sheet and sprinkled with powdered sugar, after which it is baked.

Long fingers arose in the late fifteenth century at the court of the duchy of Savoy, France, in honor of a visit by the king of France.
