Bread with tomato

Bread with tomato

Pa amb tomàquet, or "bread with tomato" in Catalan, is a Catalan cuisine consisting of (possibly roasted) bread with ripened tomato. It is seasoned with olive oil and salt and sometimes garlic is first rubbed on the bread before the same is done with the tomato. In many Catalan restaurants, the tomato mix has already been prepared and you only need to lubricate it. The dish can be served with several sausages (beef, chorizo, fuet, etc.), ham, cheese, anchovies or other marinated fish, or roasted vegetables such as escalivada.

In the beginning, Panco was made with slices of roasted pa pagès, round, quite large wheat bread (from ½ kg to 5 kg with a diameter of 20 cm to 50 cm).

It is said that there is an ideal order in which to use the ingredients to get the best taste. First, the garlic is rubbed on the bread. Then the same is done with the tomato. Then add salt and finally the olive oil. To make everything a good one, traditionally, the end of a baguette is used and all ingredients are compressed.
